Nizam’s Kathi Kabab (Supermart 1, DLF Phase 4, Gurgaon )

In a nutshell:

Famous for its rolls that I found to be expensive & good but not upto the expectations, this tiny takeaway place also sells some good biryanis, kababs & curries.

kathi roll at Nizam’s

Short Description – In case u r in a hurry:

Kolkata has come up with some innovative permutations & combinations in kathi rolls (generally called rolls) over the last decade or so. What started as a basic egg roll, has now I guess 20+ combos like double egg roll (made with 2 eggs), double egg chicken roll (2 eggs & 1 portion chicken), double egg double mutton roll ( 2 eggs, 2 portions mutton) , paneer roll (no egg & 1 portion of paneer )etc …..just to name a few. So most places selling roll wud have a long rate chart that wud list prices of these. While going thru the rate card at Zeeshan , Park Circus, I noticed they sell bheja roll (goat brain roll), bheja egg roll etc as well. Fish being a bong favourite, has also rolled into rolls of late.

As of today none of those rolls cost more than Rs. 60 (the 2+2 combos), including Nizam’s Kolkata. Nizam’s Gurgaon however charges Rs. 160 for a double egg double chicken roll which is surely high by any standards. I am a person who comfortably parts with huge amounts of money on food if the food is that good – but this seemed more to me as well. However, we decided to order expecting that at least our tastebuds wud rejoice after eating roll from the legendary Nizam’s.

mutton burrah

We also ordered Mutton Burrah Kabab as that is a dish which clearly demarcates the great Mughlai chefs from the Good, ordinary & bad Chefs.

Detailed Description – In case u have the time to njoy reading:

The double egg double chicken roll came in a smart printer paper box. Looked impressive & enhanced the urge to dig into the roll fast.

smart packaging of the egg rolls

The roll turned out to be made with a fairly thin plain paratha as compared to the slightly thicker laccha paratha used in traditional Mughalai food shops in Kolkata e.g Zeeshan etc. The roll is traditionally fried with less oil on a tawa – This one seemed to be almost deep fried. Result : The thin non laccha paratha became crisp & brown at edges.

I wud not say that is bad but that is not usual. A laccha paratha roll surely tastes better.
The salt that is sprinkled at the time of frying the roll was not appropriate. So the basic roll had less salt. Is that complacence (for being a legendary ‘roll’ brand) on part of the staff or handiwork of sheer untrained staff who come cheaper?

Another view of the roll @ Nizam’s

The grilled chicken pieces inserted in the middle of the roll were simply awesome & that shows the master skills of the chef – a skill perfected over years of experience. Perfectly spiced, superb taste, soft texture & brilliant overall.

Overall for the roll – The outstanding grilled chicken in an ‘OK OK’ sub-optimally salted double egg roll led to an average experience (2.5/5).

The mutton burrah was a revelation – Unlike the dry burrah at Karim’s, Al Kausher, Arsalan etc, the burrah at Nizam’s is served with I wudn’t call a gravy but some kind of an oily sauce that tasted very close to a pickle!!!

The mutton burrah with a sauce!!!!

The mutton was very soft, had an almost perfect texture, was very spicy but not that hot & tasted overpowering & good. I guess the burrah was sautéed in some fat with a masala mix that was very close to a pickle. I don’t know why this additional process was done but the result was not bad for hardcore carnivore foodies like us. However, I guess that might alienate the ‘oh its too oily & not good for health’ populace of Gurgaon.

mutton burrah

Overall for the burrah – I liked the burrah but wud rather have the dry version that is available in most other places (mentioned above) as snack. This sauced up version is good if u want to eat it as a main course with a dry bread, say rumali roti / Mughal style tandoori roti. I wud give a (3.5 / 5) to this dish at Nizam’s.

Overall for Nizam’s Gurgaon – I wud revisit if I am in the vicinity & hungry. However, I wud not travel the distance to eat out here.
