Terrazzo is the coffee shop for Hilton shilim spa resort. Only residents can dine here. This is one of the few restaurants in this huge campus – the green table, mountain bar and bistro etc.

Breakfast is served to the residents here. This multi

cuisine restaurant is open for lunch and dinner too.

For dinner, While choosing what to order, we were deliberating whether to have western or Indian. We saw there was nothing in ‘chef’s recommendation’ section in western non vegetarian (chicken I consider as vegetarian). There were 3-4 in Indian section. So we assumed that the kitchen is good with Indian food and hence went for it.

The menu card was a crisp 2 pager. It had good description of the dishes. It also mentioned chef’s recommendation.

The guys in service were average – very nice behaviour but knew nothing about food. Did not have answers to any of my questions. At such top end properties it is good to have people who love food and have a point of view on the food being served.

When the guy failed in answering my simple question, he called Chef 1. He made a suggestion. For second question he went back and sent chef 2!!! I was not asking masterchef Australia level questions – I was asking basic questions to help decide on what to eat.

Dinner

Fish Amritsari river sole flaky slightly juicy, as good as a sole cud get. There was a thin layer of something on top of the kabab – egg. That helped the fish retain the little bit of juiciness. Chef told us that sole was used. We knew it was sole but were expecting some magic which in hindsight proved to b a bad decision. The fish was ordinary and the job done by the kitchen was ordinary. Rate it 3/5. U hv to go to Pappu fish corner in gurgaon to hv way better Amritsari fish at of course lower price.

We saw chef’s recommendation on the menu on two dishes – Raan and Awadhi dum biryani. When we asked which is better, Though chef2 initially said both were equally good, he later suggested raan.

The raan experience was like dating an extremely attractive person with violent mood swings.

The dish had Outstanding gravy poured on top during finishing, that was finger licking good. We finished off the gravy till the last drop. Rate the gravy 4.95/5 – the ‘high’ of the mood swing.

The meat was the one that was the ‘low’ of the mood swings. Some parts of the meat were very soft and good. Some others were hard, chewy and some were actually inedible . Clearly the meat was in the deep freezer half cooked and then it was not thawed properly. Rate the meat 2/5. Gave this feedback to the chef but he did not react which means probably my hypothesis is correct.

In hindsight it was a big mistake to order this dish here. This reinforced my theory that special north Indian mughalai meat dishes like raan are best had at famous roadside shops / stalls like idris, Rahim, Royal etc and at signature 5 star restaurants like dum puhkt, Bukhara, peshawari etc. Also it is important to order such dishes in restaurants which regularly sell these dishes – else one is fed half cooked, Refrigerated meat.

Overall rating of the dish averages out to 3.5\5

Chef recommended butter laccha parantha to go with it. That was very good. Perfect from all aspects.

Kaali daal was served with the raan. The daal was very good. No excess cream floating on top. Rate it 4/5

For dessert we ordered apple crumble with vanilla sauce and home made ice cream. It was quite a disaster. Everything was unidirectionally sweet. The crust did not have any salt. The apple hardly had any sourness. The flakiness and crispness of the base was sub optimal. The ice cream was unidirectionally over sweet. The vanilla cream was unidirectionally over sweet. Rate the dish 2/5.

Overall a poor experience from a great property.

Breakfast

There was an option to go for a la carte as well as buffet. After the experience of the previous night we decided to go for the buffet

There were all the usual suspects – idli, vada, bread, butter, boiled egg, fresh juice, poori Subzi, oats, corn flakes etc

I will cover few other dishes here which were on order and were being served to the table

Eggs Benedict had a lovely in-house baked bread base that had the perfect texture. It was firm enough to hold the egg and soft enough to b enjoyed. It was not fluffy and tasted good on its own. There was no bacon in the benedict. Excellent quality eggs. Good sauce. Simple, perfect. Rate it 4/5

I was surprised to see tomato sauce served with eggs Benedict!!!

Eggs florentine was very good but not as good as the Benedict. The spinach was just like a visual prop – it’s flavor or taste did not express itself. The base was not as good as the Benedict. Lovely eggs, perfect texture. Rate it 3.75/5

Scrambled egg was very good – moist, creamy and perfectly seasoned, with nothing. Just that the one at andaz delhi is miles ahead. Rate it 4/5

Nutella Crepe was very nice. Soft crepe which let the filling express itself very well. Rate it 4.25/5. Kala ghoda cafe mumbai makes way better crepes just by adding a hint of salt.

Overall rating of food at terrazzo averages out to 3.5/5

Wud surely avoid this restaurant in my next visit to this property.
