Super easy to make & Super good to eat……………

Once in a while when ur favorite eggs might start to seem boring, u might consider making this.

Take two bunches of baby spinach and clean it thoroughly. Blanch the leaves salted boiling water for two minutes then drain off the water and refresh the leaves by washing it in cold water. Squeeze out any excess water.
Mince 4 cloves of garlic.

In a pan heat one tablespoon butter on medium heat. Add the garlic and fry till light brown. Add the spinach leaves and mix properly. Season it with salt. Keep aside and let it come to room temperature.
Take two eggs and beat it with a fork adding salt to taste.

Pour it on a flat dish and dip two slices of bread and let the bread soak up the egg properly. However, keeping it two long will lead to disintegration of the bread.

Soak the bread in beaten eggs

Put the spinach mix on one bread and top it up with another.

Meanwhile, heat butter on a flat griddle (Tawa) and put the prepared bread slices on it. Put stove on low fire.

Put a lid on it so that some pressure is also put on the sandwich.

Cook 2 minutes on each side on low fire or until it is golden brown on both sides.

Only regrets: fresh spinach is terribly hard to come by here in this scorching heat; also, these days, one will definitely have to search real thoroughly for some “Deshi Murgir Dim”. Well, come winter, and then, maybe… 🙂
thanks for the comments. Nowadays super markets sell some baby spinach & they also sell ‘semi organic eggs’. U might want to try that option. However the fresh baby spinach of winters & real desi egg will b better than this anyday….
That’s the point: living where I live, the only option would be to take a motorbike ride to Dwaronda and ask Sohodeb-da to lend the ingredients from his kitchen, as supermarkets are yet to adorn the landscape hereabouts. 😛
