Super easy to make & Super good to eat……………
Once in a while when ur favorite eggs might start to seem boring, u might consider making this.
Take two bunches of baby spinach and clean it thoroughly. Blanch the leaves in salted boiling water for two minutes then drain off the water and refresh the leaves by washing it in cold water. Squeeze out any excess water.
Mince 4 cloves of garlic.

In a pan heat one tablespoon butter on medium heat. Add the garlic and fry till light brown. Add the spinach leaves and mix properly.
Add ½ cup milk to the mix. Season it with salt.

Cook till moisture has evaporated.

Keep aside and let it come to room temperature.
Take two eggs and beat it with a fork adding salt to taste. Add 2 teaspoons milk to this mix.

Heat flat griddle (flat like the ones used for making dosa) & apply butter on the surface.

Pour beaten eggs & ensure that the full griddle is covered. Lower the temperature.

Once the egg is somewhat set, put the spinach mix on top, as shown in the picture. Do not let the egg totally dry up.

Fold the egg like u fold a dosa – see picture.
